Best Banana Bobana Bread
Even with all the new recipes on Pinterest, folks still make the same old banana bread - Don't! Try this one! I usually add blueberries, but it is good plain, or with mini chocolate chips, depending on your audience. I also often sprinkle the top with cinnamon sugar or coarse sanding sugar before baking.
INGREDIENTS
1C sugar
1/2C vegetable oil
1C mashed ripe banana (2 medium)
1/2C plain yogurt (I have also substituted with sour cream or flavored yogurt in a pinch)
2 eggs
2C flour
1tsp baking soda
1/2tsp salt
1C fresh or frozen blueberries (optional, but highly recommended!)
350 degree oven. Grease and flour bottoms only of loaf pan (I sometimes do three smaller 6 inch pans, and make different versions in each). Beat together sugar and oil with mixer; add bananas, yogurt, vanilla, and eggs and blend well. Add flour, baking soda, and salt; stir until dry ingredients are just moistened. Stir in blueberries or mini chips and put into prepared pans.
Bake at 350 for 40-50 minutes (shorter for smaller pans) until toothpick inserted comes out clean. Cool slightly before removing from pan; so good warm!
