Fab 15-Minute Pumpkin Soup
This recipe is from dear friend Becky Rapport, a Practice Grandma at the time, and now Grandma to Damien in real life! It is quick to make, and does taste fab, though when you are lunching with forever friends, the love adds a lot of extra flavor! Add a seasonal salad or grilled cheese to your feast!
SOUTHWEST PUMPKIN SOUP
3C chicken stock
1C whipping cream
15oz. can pumpkin
1/2tsp ground coriander (coriander is dried cilantro, so you can skip if you are garnishing with that and don't have it on hand)
1tsp ground cumin
1/2tsp chili powder (not spicy, but 1/8tsp would work too)
3T brown sugar
1/8tsp nutmeg
Garnish - 3/4C grated sharp cheddar cheese, chopped fresh cilantro
To make: Bring chicken stock and cream to a boil in a heavy pot. Whisk in pumpkin and spices. Reduce heat and simmer until soup thickens (about 15 minutes). Season with salt and pepper. Garnish each serving with cheddar cheese and cilantro to serve. 4 servings.
